Bolognese style meat filling made with a blend of ground veal & chuck, our own rich veal demiglaze and a mire poix of caramelized carrots, onions, celery, herbs & plum tomatoes. This sumptuous and coarsely textured filling is surrounded by pink peppercorn pasta. |

Plump steamed crawfish is sautéed with a mixture of chopped andouille, Cajun spices, caramelized onions, red and green peppers and encased in red & white striped pasta. |
