Bolognese style meat filling made with a blend of ground veal & chuck, our own rich veal demiglaze and a mire poix of caramelized carrots, onions, celery, herbs & plum tomatoes. This sumptuous and coarsely textured filling is surrounded by pink peppercorn pasta.

Plump steamed crawfish is sautéed with a mixture of chopped andouille, Cajun spices, caramelized onions, red and green peppers and encased in red & white striped pasta.

Crabmeat & steamed lobster are coarsely ground and tossed with drawn butter and herbs. This mixture is folded into a crab mousse then piped into a striped round ravioli with squid ink and red pepper pasta.

Whole pieces of sautéed bay scallops and large shrimp are combined with roasted shiitake mushrooms and freshly chopped herbs, infused with a Spanish fino sherry reduction. This rich seafood filling is piped into an extra large 4” round ravioli, herb studded pasta.

Osso Bucco, the culinary treasure of Lombardia, Italy takes on contemporary form in Nuovo’s version of this gourmet classic. Thickly sliced, tender, wine braised veal are combined with caramelized baby carrots, onions and celery then enhanced with an authentic gremolata of lemon zest and coarsely chopped herbs. This symphony of flavors and texture is encased in a delicate saffron flavored golden 4 inch round ravioli.
